The canonical “options as data” shape: name is the option keyword as
written (ENGINE, AUTO_INCREMENT, CHARSET, …) and value is its argument.
Boxed inside CreateTableOptionKind::KeyValue to keep that enum lean; mirrors
the CopyOption list element.
