A ChangeSubscriber that collects received events in a Vec behind a shared Mutex. Useful for unit tests.

Create a new subscriber and return it together with a shared handle to the underlying event buffer so tests can inspect received events without keeping a reference to the subscriber itself.

Return a snapshot of all received events (cloned).
