Encodes one field section, retaining dynamic references only after its bytes are written.

Capacity failures leave both scratch slices unchanged. Later failures can overwrite scratch, but never modify destination or encoder accounting. Each semantic input needs one plan slot; plan slots are opaque overwritten scratch and hold no semantic value on return.
