Provider tag for audit records. Serialized with default enum tagging (externally tagged → "Ollama" / "CloudAnthropic" / etc.) so the audit schema is grep-friendly in ops tooling.

llama.cpp-only cutover (2026-07, Phase C): the Candle variant was removed with the in-process backends — historical audit records carrying "Candle" predate the cutover and are not deserialized by Lunaris.
