Every key gw exposes through gw config get/set.

Keys here mirror the JSON paths in crate::config::Config. The ValueEnum derive gives clap a closed enumeration so a typo at the CLI fails fast instead of silently writing a key the code never reads.

Order is the order users see in gw config list — keep related keys adjacent.
