Default factory used by the SaaS binary.

Reads the tenant’s allowthem_email_config row and dispatches:

mode = managed (or no row) → ManagedEmailSender (Postmark-backed) using the deployment config plus the tenant’s resolved display name.
mode = smtp → SmtpEmailSender with the decrypted credentials.
mode = webhook → WebhookEmailSender with the decrypted secret.
