Parse a ground-truth markdown doc into per-section key strings.
Accepts the Wave 8 corpus format (## section heading + - item bullets)
for both the v2 ontology (architecture/entrypoints/behavior/
state_authority/contracts/landmarks/tests) and the legacy names
(components -> architecture, flows -> behavior, ownership ->
state_authority). A bullet is either the bare key string or
<key string> — explanation; the explanation is not expected in atlas
output, so only the key string (before —) is kept. Inline-code
backticks are stripped.
