What the tab runs to take the text out of the PDF at path, a path inside the container.
-layout keeps the columns and the indentation of the page, so a table or a two-column page
reads the way it looks rather than in the order the file happens to store its words. The text
goes to standard output, where the tab reads it; every page ends in a form feed, which is how
the pages are counted.
