The image table’s OS names, the ones every target maps to its own images (e.g. Windows from
an evaluation ISO locally, a license-included image in the cloud). A spec writes the OS as
<family>@<version> (crate::os); a parsed spec’s vm.os holds one of these names. In
the order of crate::os::FAMILIES.
