Parse a YYYY-MM-DD HH:MM:SS string (interpreted as UTC) into Mac-epoch
seconds. The inverse of format_mac_date; returns None when the string
doesn’t parse or falls outside the representable range. An empty string (or
the literal 0) maps to 0 (“no date set”), so a cleared field round-trips.
