Open the log and install the logger and the Polars warning hook. Safe to call
again (the Python binding runs the TUI once per view); the latest settings win.
Returns what to tell the user when the log cannot be opened. Not printed here: the TUI may already own the terminal, and stderr is then the log that failed.
