Split a gs:// or s3:// URL into its bucket and the prefix inside it.
The prefix comes back without a leading or trailing slash, and empty for the bucket
root, which is the shape object_store wants. A source ID (s3://<id>@bucket) is
not part of the bucket and is dropped.
