Normalize gh --json or GraphQL JSON into the renderer’s stable model.

The function accepts the ordinary GitHub CLI spelling as well as the data.repository.issueOrPullRequest GraphQL envelope used by shims. It never accepts display-oriented text; malformed structured data is an error.
